I’ve been missing sushi for a while now, so last night I decided it was time to go out and have some sushi and see how feasible it would be without rice.

Well, it was a complete success.

My husband and I ate lots of sashimi. There was salmon, pickled mackerel, ‘fake’ crab meat, and butter fish. We also had BBQ’d eel and shrimp. I thought there was no way we would be able to do it without eating the rice, but not only did we do it, we were full after dinner.

Also, an hour after eating, I tested my blood sugars and they were 4.9. That’s pretty incredible considering that usually after I eat sushi (with all the rice) and I do a blood test (even after nearly tripling my insulin dose) it’s still in the high teens, even into the 20’s.
